Butterbeer Fudge

Butterbeer Fudge

A deliciously sweet, Harry Potter inspired fudge that's best served cold on a warm September day. 

Ingredients

  • 3/4 cup butter
  • 1/2 cup half and half (or heavy whipping cream)
  • 7 oz marshmallow cream
  • 2 cups white sugar
  • 1/2 cup brown sugar packed
  • 11 oz butterscotch chips
  • 4 tsp rumchata (or 2 tsp rum extract)

Instructions

  1. Line a 9x9 pan with tin foil and spray with nonstick spray

  2. In a saucepan stir together butter, half and half, marshmallow cream, and sugar. Place over medium heat, stirring constantly.

  3. Continue stirring until mixture starts to boil, allow to boil for five minutes.

  4. Remove from heat, add in extracts and butterscotch chips. Stir until all chips are melted.

  5. Pour into prepared pan and place in fridge to set. 

  6. Once chilled, cut and serve!

Recipe Notes

This yummy treat is best served cold, as it will become sticky and melty in warm and humid environments.
