Cinnamon Coconut Latte

A warm, creamy latte that tastes like it came straight from your favorite coffee shop.

Ingredients

  • 2 tbsp coconut oil
  • 1/3 c coconut milk or preferred milk substitute
  • 12 oz brewed coffee or whatever amount your keurig brews
  • 1/4 tsp cinnamon
  • a squeeze of honey
  • a drop of vanilla extract

Instructions

  1. Brew your coffee. I use my Keurig's largest setting. You will want at least a cup, but the amount doesn't really matter.

  2. Place your coconut oil and milk in a bowl and microwave until oil is melted.

  3. Add coffee and milk mixture to blender while still hot. Add in cinnamon, honey, and vanilla extract.

  4. Blend until frothy.

  5. Pour into a cup, top will a little sprinkle of cinnamon, and enjoy!

Recipe Notes

This recipe yields one really big cup, but it doesn't store well in the fridge due to the coconut oil. For this reason, this recipe is best enjoyed with a friend. Or make yourself a half recipe. Or just drink it all by yourself. I'm not judging.
